Buttermilk Fried Calamari with Spiced Rémoulade

Rémoulade

1 Cup Mayo
2 Tbs stone-ground mustard
2 Tbs ketchup
1 Tbs paprika
½ Cup scallions
1 tsp garlic
1 Tbs minced celery
1 Tbs shallot
2 Tbs parsley
1 tsp hot sauce
Salt and Pepper

-Combine ingredients and refrigerate


Buttermilk Fried Calamari

1 lb Calamari (cut into rings and small pieces)
1 Cup Buttermilk
Flour
Salt and Pepper
Canola or peanut oil for frying

-Let calamari soak in buttermilk for
one hour. Heat canola or peanut oil
in a fryer to 365 degrees. Toss in
seasoned flour and shake off excess
flour. Fry for one minute in 365
degree oil. Drain on paper towels
and season lightly with salt and pepper.

-Serve calamari with Rémoulade and enjoy!
